- 1 1/2 c. oil
- 4 eggs
- 2 c. sugar
- 3 c. shredded carrots *(I usually put a 1 lb bag of baby carrots in food processor)
- 2 c. flour
- 2 tsp. cinnamon
- 1 tsp. salt
- 2 tsp. baking soda
Cream Cheese Frosting
- 8 oz cream cheese, softened
- 1/2 c. margarine/butter
- 2 tsp. vanilla
- 3 1/2 c. powdered sugar
- Stir oil, eggs, sugar and carrots together.
- Add remaining ingredients.
- Pour into a greased and floured (I just spray with PAM)
- Bake at 325 for 45 minutes, or until tests done
- Cool, then frost with Cream Cheese Frosting.
- For Frosting: Beat cr. cheese, margarine and vanilla. Add powdered sugar. Mix well.
