- 1 lb. ground beef
- 1 pkg. taco seasoning
- 2 c. minute rice, uncooked
- 1 c. cheddar cheese, shredded
- 2 c. shredded lettuce (opt.)
- 1 large tomato, chopped (opt.)
- Brown meat in large skillet on medium-high heat; drain.
- Add seasoning packet and 2 cups of water; stir. Bring to a boil.
- Stir in rice, sprinkle with cheese and cover.
- Reduce heat to low and simmer for 5 minutes.
- Top with lettuce and tomato (optional) just before serving.
