Chicken Pesto Salad

Ingredients:
  • 2 cups cooked chicken breast, shredded
  • 2 tbsp sour cream
  • 1 tbsp mayonnaise
  • 1 tbsp pesto
  • 1/3 cup celery
  • chopped onion to taste
  • salt and pepper to taste
  • 1/3 cup craisins
  • pistachios or pine nuts (optional)
Directions:
  1. Combine all ingredients except pistachios or pine nuts in a mixing bowl
  2. Add more mayo to obtain desired consistency
Notes:
Best when chilled overnight.
Place on a bed of lettuce and top with tomatoes
Serve with crackers
Serve on croissants, wraps or bread with lettuce
