- 2 cups cooked chicken breast, shredded
- 2 tbsp sour cream
- 1 tbsp mayonnaise
- 1 tbsp pesto
- 1/3 cup celery
- chopped onion to taste
- salt and pepper to taste
- 1/3 cup craisins
- pistachios or pine nuts (optional)
- Combine all ingredients except pistachios or pine nuts in a mixing bowl
- Add more mayo to obtain desired consistency
Best when chilled overnight.
Place on a bed of lettuce and top with tomatoes
Serve with crackers
Serve on croissants, wraps or bread with lettuce
