- 2 medium tomatoes, sliced & quartered
- 1 large cucumber, peeled & sliced
- 4 green onions, chopped
- 1 TBSP sugar
- 1 tsp salt
- 1/4 tsp pepper
- 1/3 cup cider vinegar
- 1 cup water
- Combine tomatoes, cucumbers & onions.
- In a small bowl combine sugar, salt & pepper.
- Whisk in vinegar & water.
- Pour over veggies & toss to coat.
- Cover & refrigerate for 4 hours or overnight.
