Ingredients:
- 1 3/4 c. flour
- 1/4 c. sugar
- 2 1/2 tsp. baking powder
- 3/4 tsp. salt
- 1 egg
- 1/2 c. milk
- 1/3 c. oil
- 1/2 c. mashed ripe bananas
- 1/2 c. unsweetened applesauce
- 1 c. mini choc. chips
Directions:
- In large bowl combine flour, sugar, baking powder and salt.
- Combine the egg, milk, oil, banana and applesauce, stir into dry ingredients, just until moistened.
- Fold in mini choc. chips.
- Fill greased muffin cups 2/3 full.
- Bake at 400 for 20 minutes, or until test done with toothpick. Cool for 5 mins, remove from pan.
We like to make these into mini muffins. A great treat for breakfast or at snack time.
