- 4 eggs
- 2 cups sugar
- 1 (16 oz.) can of pumpkin
- 1-1/2 cup oil
- 3 cups flour
- 2 tsp. baking soda
- 2 tsp. baking powder
- 1 tsp cinnamon
- 1 tsp. salt
- 2 cups (12 0z.) pkg semi-sweet choc. chips
Directions:
- In a large bowl, beat eggs, sugar, pumpkin and oil until smooth. Combine flour, baking soda, baking powder, cinnamon and salt; add to pumpkin mixture and mix well. Fold in chocolate chips. Fill greased or paper-lined muffin cups 3/4 full. Bake at 400 degrees for 16-20 minutes til muffins test done. Cool in pan for 10 minutes before removing to wire rack. Yields: 30 muffins
I used the mini chocolate chips and they turned out delicious
